It is important to keep track of your experiment because if you don't you can miss a variable and completely ruin the whole experiment and keeping track of data also helps with reinforcing evidence after an experiment is finished

It is important to know how you are collecting the data because if you change how you get your data you will get bad data.

It is important to keep things running smoothly and if you don't get the outcome that you were looking for, you are able to look back and see if you messed anything up along the way.

It is important to keep track of things in your experiment so that way in can be considered legit and people could replicate it in the future.

Keeping track of an experiment lets you know that the results of the experiment are genuine and valid. It also builds your credibility as a scientist.
